🥘 Mutton Haleem – Perfect Restaurant Style Recipe

🧾 Ingredients

– Main Ingredients

– 500 g mutton (with bones preferred)

– ½ cup broken wheat (daliya)

– 2 tbsp chana dal

– 2 tbsp moong dal

– 2 tbsp masoor dal

– 1 tbsp urad dal

– 1 large onion (sliced)

– 1 tbsp ginger garlic paste

– ½ tsp turmeric powder

– 1½ tsp red chilli powder

– 1 tsp coriander powder

– ½ tsp garam masala

– Salt to taste

– 4 tbsp ghee or oil

Whole Spices

– 1 bay leaf

– 1 cinnamon stick

– 4 cloves

– 3 green cardamoms

For Garnish

– Fried onions

– Fresh mint leaves

– Coriander leaves

– Lemon wedges

– Cashews fried in ghee

👨‍🍳 Preparation (Restaurant Style Method)

1️⃣ Cook Wheat & Lentils

Wash broken wheat and all lentils. Pressure cook with 3 cups water for 6 whistles until very soft.

2️⃣ Cook the Mutton

Heat ghee in a cooker. Add sliced onions and fry until golden.

Add ginger garlic paste and sauté until fragrant.

3️⃣ Add Spices

Add turmeric, chilli powder, coriander powder, garam masala and whole spices. Mix well.

4️⃣ Add Mutton

Add mutton pieces and cook for 5–6 minutes until slightly browned.

5️⃣ Combine the Haleem Base

Add cooked wheat-lentil mixture and mix well. Add water if needed.

6️⃣ Slow Cook

Cook on low flame for 20–25 minutes so the mutton becomes very soft.

7️⃣ Mash for Restaurant Texture

Mash the mixture using a wooden masher or hand blender until thick and creamy.

8️⃣ Final Tadka

Heat ghee with fried onions and pour on top for rich restaurant flavor.

✅ Serve hot with fried onions, lemon juice, and fresh mint leaves.
